Naranjo
Vinícola Atacalco, Cárabe de Itata

Vinícola Atacalco, an invited boutique winery, is the personal project of winemaker Ricardo Baettig and his partner Carlos Spoerer. The grapes are sourced from a dry-farmed vineyard in the Itata Valley. Fermentation occurs on the skins, followed by five months of aging in clay amphoras.
This wine boasts a distinctive personality, with aromas of apricot, peach, green tea, orange zest, and chamomile. On the palate, it is dry, showcasing firm acidity and well-integrated tannins.
Pairing: Ideal for pairing with our smoked cabbage and mushroom skewer, the tuna skewer, and the blood sausage skewer.
